chocolate cake!

(hey... debby??? I was supposed to post this ages ago...

Remember this cake?

Below is the recipe...



Cake concept:

~ make a cake batter and divide it between to 13" round pans
~ bake 'em at 350 and get them out on time! (toothpick test center and edges but about 30-40 minutes.
~ pop 'em out of those pans (let them cool or they'll break!)
~ use a big-ass bread serrated knife to slice each round in half... making four (4!!) rounds.
~ put creamy icing between a couple of layers, some pie filling (cherry?) - but only a little - between the next layers, then DON'T use the last layer.
~ ice the top and sides of the big cake, and sprinkle with fresh grated sweetened chocolate and dust with cocoa.
~ make a two layer half cake out of the last, unused, layer and put icing between the layers, wrap and freeze that! (good treat another day).

Recipe
Dry stuff:
2 cups sugar
1/3/4 cups flour (sift if its even a little lumpy)
3/4 cups cocoa
1 tsp baking powder
2 tsp baking soda
1/2 tsp salt

Wet stuff:
2 eggs
1 cup milk
1 cup cold coffee (no really)
1/2 cup veg oil
1 tsp vanilla

~ combine and mix well (I use a hand mixer)
~ bake at 350 for 30 - 40 mins.

Icing:
Option 1: I used (in that picture) about three cups of icing sugar, a melted unsweetened cube of chocolate, 1/3 cup of cocoa, few drips of vanilla, 2/3 cups of well softened (but not melted) butter and a few tablespoons of milk. Mix the melted choco and butter, vanilla, add cocoa and start beating in the icing sugar.

alternative.

Just bake the whole deal in a big rectangle pan and ice with the following... still fantastic!!!
1/2 cup butter
1/2 cup brown sugar
1/4 cup milk
mix and cook in a little pan until it's brown.
Let this cool (so make it as soon as the cake goes in the oven and it's cool by the time the cake comes out)
Add 3 cups fo icing sugar, 1 tsp vanilla and beat the crap out of it... spread on cake and go nutz.
