Here is the recipe for the banana bread I made today... it's fricking fantastic stuff... no fooling.
Note: You need to have over ripe bananas. Next time the bananas get too ripe... toss three of them in the freezer. They turn to black, frosty sticks of ugly but tough... they will ultimately be perfect for banana bread. Also, you really want to have a "loaf" pan or two (this recipe makes two loaf pans). If you make muffins or "small cake pan" batches... you end up with too much edge bits and not enough yummy middle bits.
Note also that fresh blueberries are great freezing fruits. Get a couple of quarts of little bitty fresh blueberries sometime and put a few baggies in the freezer with a cup of berries in each. Great for baking.
So, the bread!
1 cup white sugar
1/2 cup veg oil
(beat sugar and oil together - mixing by hand is fine)
2 eggs - beat 'em up good in a small bowl.
3 ripe bananas (if their frozen... nuke 'em till their soft) (smush 'em up and add 'em to the eggs)
2 cups of all purpose flour. Sift it if it's lumpy.
1 tsp of baking soda
1/2 tsp of salt
1/2 tsp of baking powder
Add all this powder to the big bowl.
1/4 cup of orange juice (pour it in the big bowl)
1 cup of blueberries (if frozen, run 'em under water until the get the chill off)
Pour the egg/banana goop into the big bowl and mix this all up well... then add the blueberries and stir.
Divide evenly between two small loaf pans.
Bake at 350 for 60 minutes... It's perfectly cooked with you think the very edges are looking too dark! :D
Note: Banana bread is always best the next day...
