So, yeah... yesterday was Canada day and I didn't do much of the whole computer-bloggo-guy thing at all.
My alternative was way more fun. :)

In stark stark seriously stark contrast to the entire month of June, the first day of July was ... without RAIN. Wow!
A beautiful day for a Canada Day celebration.
We lazed about the house for the morning and then went to the town center for the fun stuff... midway rides, games and ... this cool paint-ball-except-they-weren't-paint-balls game thing that we paid five bucks a head to play for five short minutes... but oh man... put a semi automatic air riffle in the kids hands, slap a face/neck mask on 'em and watch the fun fly.
I got my kicks ping'ing my little rubber sorta-paint-balls off some 17 year old dudes head for five minutes... This - of course - made the deal worth EVERY SINGLE PENNY. :D

We went to my folks house for dinner... and I made a crazy easy cheese cake (see below) that was quickly devoured.
Then it was time to go to the fireworks... big fun...
And then home ... to watch Serenity. We finished the season of Firefly and concluded everything with Serenity. The kids were very enthused. (and I, of course, enjoyed it on this the second time around. :D)

Today started (and seems to be continuing) as another beautiful day...
I'm hoping July will be all that I have hoped for.

~ off to the clients nice and early to conduct interviews... paper everywhere... file folders... emails... calendar entries... it's like an information tornado.
~ talk to Rogers about adding a cell phone for George... sigh... frigg'en expensive man. !!! :(
~ home a bit early and sort out some expense reports and time reporting... of course, being able to actually find the contract liaison for this gig ... would be a huge help.
~ Watch Season 1, Episode 1 of Torchwood with the boys tonight... :D

~ I didn't eat that piece of left-over-pizza for lunch... I've felt that "hmmm... am I going to throw up?" vibe ever since... ug.
~ for sirenity to enjoy that breath... :D
~ that darkbay gets reminded what "moderation" means...
~ and pasticcio... yes you will. Get used to it, I mean. :D

We all got to listen to the Minister for Defense (Canada) say how sure he is that Canadian troops are on-schedule to pull out of Afghanistan... in three years. If only there was a way to wager on this. Three years is a long time and I've no doubt that the powers that be will find a new dumb ass reason to keep on making that pathetic pile of sand our troops home away from home. A pox on this!

Easy Cheese Cake...
(sorry, no picture... I just wasn't thinking! :D)
~ you NEED a mixer... stationary or hand held... whatever, but you need a mixer.
~ turn the oven on to 350...
~ get a brick of philly cream cheese, small pint of whipping cream, a box of graham crumbs and a can of cherry pie filling.
~ note: pie filling comes in two sizes of can... normal and huge. You want a normal sized can.
~ cut up the cream cheese into chunks and leave them in a mixing bowl while you screw around with the other stuff...
~ soften up about a third of a cup of butter ... um... use a whole "stick" of butter if that's how it's sold, or cut an inch off a brick of butter... and "soften up" means zap it in the microwave for 25 seconds and them mush it up with a fork.
~ scoop/pour the butter into a smaller bowl with 2 cups of the graham crumbs... add in a level tablespoon of white sugar...
~ mix this up well with a fork, then dump it into a pan. I LOVE my 9 inch spring form pan, but you can use anything... like an 11 inch long corning roasting dish... whatever...
~ turn OFF the oven!
~ use the fork to spread it out and pat it all down. If you pat it down too tight... the result is a crust you can cut without a knife and you end up shooting crumbs everywhere... so ... not too harsh on the pat-down thing.
~ put the pan with the graham crust into the OFF oven and put the whipping cream container in the freezer... and leave it all for 10 minutes or so...
~ go have a coffee.
~ take the pan out of the oven and get the whipping cream out of the freezer (remember, this was only 10 minutes... just to really make the cream c-c-c-c-cold)
~ Got the mixer?
~ time to mix. Start beating the now softened cream cheese and pour in the whipping cream... Mix this on medium to high until it starts to thicken up ... like 2 minutes of solild mixing.
~ add a teaspoon of vanilla at the last moment and mix that in too.
~ scoop the yummy creamy mixture into the pan and use a fork to spread it out evenly over the graham crumbs.
~ HINT... kind of try to make a raised-edge out of the creamy stuff if you're using a spring-form pan.
~ pop the pan in the fridge... leave it for at least an hour, but all afternoon is fine.
~ scoop the can of cherry pie filling across the top of the creamy stuff AND SERVE.
~ try not to drool when your cutting it.
~ enjoy.
