oddly enough... I'm impressed with myself. :)
So... (for my own sake) here's the recipe for that Peach Upside Down Cake thing... :D
9 inch round cake pan... x 2
1 large can of sliced peaches in juice (no sugar added)
put 1/2 cup of the peach juice aside (it goes in the cake) and dump the rest.
Cut each of the "slices" in half... making thinner slices...
rub the bottom of the cake pans with butter.
spread about two tablespoons of brown sugar on one
and dust the other with a bit of flour.
put the brown sugar one in the over to heat it up... while the over "preheats" to 350.
Just for a couple of minutes... then take it out...
Mix together; (cake mix)
2 cups flour
3/4 cup of sugar
1/2 cup of butter (softened)
1/2 cup of peach juice
1 cup of vanilla yogurt
1 tsp of baking SODA!
1/2 tsp of salt
Mix with a hand mixer till it's really creamy smooth...
You can stir in a 1/2 cup of any chopped fruit... peaches perhaps? lol
Mix seperately; (topping)
2 tbsp of butter
1/4 cup of brown sugar
3 tbsp of flour
1/2 tsp cinnimon
Mix this up ... it should end up "crumbly"
Lay peach slices in a pattern on the bottom of the pan with the brown sugar... um... look at the picture. There should be some left when your done! Chop them up and add a tbsp of brown sugar to them...
Sprinkle the "topping" all over the peaches... use it all.
Spoon blobs of the cake mix over the peaches... ... use about 2/3's of the cake mix.
Spoon the rest into the other cake pan...
Bake 'em at 350 for about 15 mins... The smaller portion pan (no peaches) should be done ... take it out.
The larger one is WAY not done!
Leave the larger one in while you "flip" the smaller one out of the cake pan... (you know, rack on top of cake pan, flip upside down and tap it a few times)
Now put the empty cake pan BACK IN THE OVER upside down as a lid over the larger portion that's still baking... This will make it hot 'enough to cook the middle without burning the edge. It will need about 25 - 35 minutes TOTAL.
Put the smaller cake on your cake plate and score it! (cut the surface up a bit so it's not all smoooooooth)
Pour the "chopped up peaches" on it... let it seep in.
Now... the slightly tricky part.
Get the big one out of the oven... run a butter knife around the edge to ensure it's seperated from the pan.
Rub butter on a large dinner plate.
Flip the peach layer cake out of it's pan onto the plate... It's sorta slippery because of the butter...
Slip it off the plate onto the first layer....
Best to let it sit over night... but whatever...dive in!
